Typesof Pasta

In Italian cuisine there are three types of pasta: long, short and stuffed.
Although at Don Rigatoni we want you to be able to make the combination you like the most, here you will find the classic recommendations for each type of pasta.

LongPasta

These long tendrils are perfect for both light and heartier tomato sauces. The long ribbons of fettuccine are perfect for wrapping around a rich Bolognese Sauce or soaking up a cream and mushroom sauce. Spaghetti and linguine work best with smoother olive oil and tomato sauces.
Some of the most famous combinations are: Spaghetti Marinara with Meatballs, Fettuccine Alfredo with Chicken and Linguine with some seafood.


Spaghetti

Long, round, thin strands of pasta, which are generally served with a cream or tomato sauce. It is one of the most commonly used pastas in the United States and maybe the most famous pasta.


Black Spaghetti

The same size as the classic spaghetti, squid ink is added when preparing the dough. This ink provides a salty and somewhat sweet flavor as an ingredient and coloring to the pasta. most famous pasta.


Linguine

Similar to spaghetti, this pasta is flattened to achieve a more flattened shape with a greater width. In Italian, linguine means little tongues due to its characteristic shape.


Fettuccine

Elongated pasta in the shape of "ribbons", similar to linguine but wider. Known worldwide for the dish "Fettuccine Alfredo with Chicken". This pasta is also spelled and referred to as "fettuccini."

ShortPasta

Short cuts are made to capture hearty tomato sauces and chunky sauces in their sturdy hollows and ridges, giving satisfying bursts of flavor as you eat. As a general guide, choose a pasta shape that has the right size hollow to catch the pieces in your sauce.


Rigatoni

Rigatoni, which comes from the word “rigato” meaning ridged, are short, wide tubes of pasta that have ridges on the outside, but are smooth on the inside. Rigatoni are perfect for big chunkier sauces. their ridges and wide center help capture the sauce perfectly.


Penne

Penne is one of the most famous Italian pasta shapes Penne translates to the word “pen”, and gets its name from its shape – a short cylinder shaped pasta that has angled edges.


Cavatelli

Cavatelli is a small shell pasta shape with curved edges. It is a very similar shape to conchiglie, but is slightly longer. This shape does well holding chunky sauces as its opening keeps sauces in place.


Farfalle

The word farfalle means butterflies in Italian and is commonly referred to as bow tie pasta because of its shape. Farfalle recipes often feature cream-based sauces, such as alfredo.


Gnocchi

Gnocchi are a type of miniature pasta dumplings, usually made from wheat, eggs, potatoes. Gnocchi pairs well with tomato-based or creamy sauces such as bolognese, fresh cream or even pesto.


Spinach Gnocchi

Spinach gnocchi, often combined with ricotta, is one of the many variations of the classic potato gnocchi. Spinach Gnocchi originate in Tuscany, and they look more like irregularly shaped dumplings.


Gluten Free

Our gluten-free pasta is made using a blend of different grains, including corn and rice. For the most part, multigrain pasta can be a good alternative to regular pasta.


Orecchiette

The word ‘orecchiette’ means ‘little ears’. Their unique and pretty shape makes it easy to hold on to pasta toppings to make each bite that much more delicious.

StuffedPasta

Stuffed pastas are a very particular category since they have a filling that can be meat, cheese, vegetables or lobster, depending on which pasta you choose.
Meat and vegetable fillings are usually combined with tomato sauces such as napoletana or marinara. Cheese and seafood fillings are usually combined with cream sauces, such as fresh cream and alfredo, or even a mixed sauce such as principessa. On the other hand, vegetable fillings such as lasagna go very well with tomato sauces such as Bolognese.


Ravioli

Ravioli consist of two layers of thin pasta with a filling between them, which can be meat, cheese or lobster.


Tortellini

Tortellini is a thin layer of pasta which is filled and folded in a certain way to obtain its characteristic shape. The filling can be meat or cheese.


Lasagna

One of the most popular pastas, lasagna are rectangular sheets of pasta which are layered with different fillings. These fillings can be beef, chicken or vegetables.

Typesof Sauces

After choosing your pasta, it’s time to choose the sauce. We have three types of sauces: tomato, cream & mixed and special sauces.

In the previous section we gave you some recommendations on how to combine them, but below you can see them in more detail.


Tomato Sauce

Tomato-based sauces are varied. They can include olive oil, garlic, onion, spicy, meat and various vegetables. They can be mild, where they accompany pasta, they can be more intense, giving the main flavor to the dish, and they can be hearty, such as Bolognese, which includes meat and vegetables.


Cream & Mixed Sauce

Cream-based or mixed sauces have a different flavor profile. They can be smooth, like fresh cream. They can be thick, such as alfredo. They can have a variety of flavors, such as four cheese. They can also be mixed with tomato sauces for a unique flavor and smoothness, such as principessa and alla vodka.


Special Sauce

Our special sauces are loaded with flavor. On one side, the unique combination of garlic and olive oil in the Aglio e Olio, and on the other side the classic pesto sauce, with all the flavor of basil, olive oil, parmesan cheese and a touch of fresh cream to make it smooth.

TomatoSauces



Napoletana

Classic sauce from the region of Naples. Its ingredients are fresh tomatoes, basil, olive oil and Italian seasoning.


Marinara

Our marinara sauce, unlike the napoletana, includes roasted tomatoes and garlic, in addition to the classic Italian olive oil and seasonings.


Puttanesca

Famous sauce from the Campania region, it is made with a base of garlic, anchovies and olive oil, to which fresh tomato sauce, black olives, capers and fresh parsley are added.


Arrabbiata

For the spicy lovers and adventurers, we have the Arrabbiata sauce. It consists of a base of tomatoes, garlic and olive oil, but with the addition of pepperoncini, hot Italian peppers.


Bolognese

The typical sauce of Italian family dinners. Base of fresh tomatoes, minced meat, assorted selection of vegetables and red wine, seasoned with a variety of Italian spices.

Cream& Mixed Sauces



Fresh Cream

This sauce is characterized by its simple, but rich flavor. Fresh cream base, parmesan cheese to give it texture and flavor, along with a touch of nutmeg.


Alfredo

Although it looks like fresh cream at first glance, Alfredo sauce is more complex. It includes butter, heavy whipping cream, garlic, parmesan cheese and a selection of Italian spices.


Quattro Formaggi

The ideal sauce for cheese lovers. It includes 4 different Italian cheeses: mozzarella, parmesan, gorgonzola and taleggio, achieving a sauce with a creamy texture and lots of flavor.


Principessa

Mixed sauce, including equal parts of napoletana sauce (tomato, basil and olive oil) and fresh cream.


Alla Vodka

This famous sauce includes a part of salsa principessa along with a vodka flambé, onions and pancetta (Italian bacon).


Carbonara

Classic Italian sauce, includes onions, pancetta (Italian bacon), egg infusion, black pepper and a touch of fresh cream.

Aglio e Olio

Sauce loaded with flavor, it is made with garlic and oil, plus a touch of parsley to give it freshness.


Pesto

One of the most famous Italian sauces, originated in Genoa. It consists of fresh basil, garlic, olive oil, parmesan cheese and a touch of fresh cream.

NY-Style Cheesecake

New York cheesecake is known for its creamy, satiny texture. It's rich, dense and tall with a flat top. It's made with cream cheese, eggs, egg yolks and heavy cream or sour cream, to add richness and a smooth consistency.
